A good snack, dessert, even yummy for breakfast.
- 1/2 a cup of room temperature butter
- 2/3 of a cup of brown sugar
- 2 eggs
- 4 or 5 overly ripe bananas
- 2 teaspoons of vanilla essence
- 1 & 1/2 cups of flour
- 1 teaspoon of baking soda
- 1 teaspoon of baking powder
- A pinch of salt
- 1/2 a teaspoon of freshly ground nutmeg
- Preheat your oven to 170 degrees Celsius
- Mix together the flour, baking soda, salt, baking powder and nutmeg
- In a separate bowl, mix butter, sugar and vanilla essence
- Get your hands dirty and squeeze the bananas. Add them to the bowl of butter and sugar and mix
- Slowly add the dry ingredients to the wet ingredients, stirring well
- Pour into a greased tray
- Bake for 50 minutes to an hour

You know what is the only consistent thing in this world? It is not change, I tell you! It is every household has one way or the other need a good bread recipe for overriped bananas.
